The traffic of black slaves to America was a gradual process that took place over a period of nearly 240 years, and the new arrivals carried with them recipes from back home.</p>
<p>The <a title="Cuisine" href="http://www.ijustlovefood.com/2012/06/cuisine-of-goa-pork-vindaloo/" target="_blank">cuisine</a> underwent a phase of evolution  in the new world, as the slaves experimented with traditional recipes using locally available condiments and also as cooking styles from different parts of Africa came in contact here in America and amalgamated to give rise to a new, minimalist style of cooking that had to make do with cheap (often wild) produce items and wild fowl.</p>
<h2>Era 300 &#8211; 1619 – Soul Food-History</h2>
<p>Between 300 -1619, the 1st group of Africans landed in America in Jamestown, Virginia. African American slaves were farmers, cattle raisers, and fishermen and presented several plants and seeds to plant such as black-eyed peas, okra, sweet sorghum, and watermelons as part of American’s crops and foods.</p>

<h2>Slaves Made Their Foods – Soul Food-History</h2>
<p>The slaves made their own meals from the leftovers that their masters did not eat. They frequently exchanged recipes orally with each other which led to the growth of African American cuisine. This was how many of their foods were collected for their meals.Although their love for cooking involved pork, sweet potatoes, collard greens, and spoon bread, breakfast was considered the most important meal of the day. A typical breakfast consisted of hoecakes and molasses.</p>
<h2>Young Women Learned to Make Meals- Soul Food-History</h2>
<p>They always interested in cooking. During that time in past history, little girls learned to prepare traditional foods such as fufu, which is made with fresh vegetables and pounded yams. Fufu was generally served with soup, stew, or roasted meat. The native foods were yams, vegetables, rice, and groundnuts. Africans were also extremely experienced in frying, roasting, cooking, boiling, and steaming their foodstuff. They also had special abilities preparing wild game, and planting small gardens including wild greens and fruit. Women generally worked 16 to 18 hours in the fields then prepared one-pot foods for their family.</p>
<h2>Cooking Procedures and Techniques – Soul Food-History</h2>
<p>Cooking was generally done on open pits or fireplaces with big swing black pots and large iron cast skillets and were well prepared by black cooks. Cooking on open pits are now applied as grills.The slaves did not use calculating cups or cooking products. They had no recipe books or formal coaching in cooking. They had no one to learn from except each other.It was a great challenge for them to make good food with basic tools and very minimal ingredients. Salt was also used as a preservative since there were no fridge or other techniques to preserve meals cool.</p>
<p>When examining their food for doneness, they applied their own senses, and when they sensed the need, they included a pinch of seasoning to enhance the taste of their dish. They knew by their instinct when their food was done as many chefs know today. That’s also why you see many recipes that read &#8220;a pinch of salt and pepper&#8221; or “bake until finally golden brown.”Cajun and Creole were also a familiar style of food preparation and involved such well-known dishes as jambalaya, bread pudding, desserts, dirty rice, gumbo, and red beans and rice.During that time in history, black cooks vocally exchanged recipes as they kept in mind them and today many Southerners still cook without having a recipe, just by basically remembering key ingredients and including seasonings and spices to their taste cattle During these hard and hard times, they used their own cooking food habits and methods and created many new ones along the way.</p>

<p>Although slavery greatly limited the ability of Americans of African nice to practice their cultural traditions, many practices, values, and beliefs survived and over time have improved or combined with white culture. Afro american culture developed individually from mainstream American culture, both because of slavery and the persistence of racial discrimination in America, as well as African-American slave descendants&#8217; want to create and maintain their own traditions. Blacks were freed from slavery and began to enjoy greater rights as citizens (though full recognition of their rights remained a long way off). Despite these dramatic developments, many economic and demographic characteristics of African Americans at the end of the nineteenth century were not that different from what they had been in the mid-1800s. Most Afro Americans are the descendants of captive Africans held in the United States from 1619 to 1865. Blacks from the Caribbean whose ancestors immigrated, or who immigrated to the U.S., also traditionally have been considered Afro American, as they share a common history of predominantly West African or Central African roots, the Middle Passage and slavery. It is these peoples, who in the past were referred to and self-identified collectively as the American Negro, who now generally consider themselves Afro American. Their history is celebrated and highlighted annually in the United States during February, designated as Black History Month, and it is their history that is the focus of this article.</p>

<p>Others who sometimes are referred to as Afro American, and who may self-identify as such in US government censuses, include relatively recent Black immigrants from the first African slaves were brought to Jamestown, Virginia in 1619. The English settlers treated these captives as indentured servants and released them after a number of years. This practice was gradually replaced by the system of race-based slavery used in the Caribbean. As servants were freed, they became competition for resources. Additionally, released servants had to be replaced. This, combined with the still ambiguous nature of the social status of Blacks and the difficulty in using any other group of people as forced servants, led to the relegation of Blacks into slavery. Massachusetts was the first colony to legalize slavery in 1641. Other colonies followed suit by passing laws that passed slavery on to the children of slaves and making non-Christian imported servants slaves for life. Africa, South America and elsewhere who self-identify as being of African descent.</p>
<p>Afro Africans first arrived in 1619, when a Dutch ship sold 19 blacks as indentured servants (not slaves) to Englishmen at Point Comfort (today&#8217;s Fort Monroe), thirty miles downstream from Jamestown, Virginia. In all, about 10-12 million Africans were transported to Western Hemisphere. The vast majority of these people came from that stretch of the West African coast extending from present-day Senegal to Angola; a small percentage came from Madagascar and East Africa. Only 3% (about 300,000) went to the American colonies. The vast majority went to the West Indies, where they died quickly. Demographic conditions were highly favorable in the American colonies, with less disease, more food, some medical care, and lighter work loads than prevailed in the sugar fields.</p>
<p>The history of slavery has always been a major research topic for white scholars, but until the 1950s they generally focused on the political and constitutional themes as debated by white politicians; they did not study the lives of the black slaves. During Reconstruction and the late 19th century, blacks became major actors in the South. The Dunning School of white scholars generally cast the blacks as pawns of white Carpetbaggers during this period, but W. E. B. Du Bois, a black historian, and Ulrich B. Phillips, a white historian, studied the <a title="Afro American" href="http://www.askblackie.com" target="_blank">Afro American</a> experience in depth. Du Bois&#8217; study of Reconstruction provided a more objective context for evaluating its achievements and weaknesses; in addition, he did studies of contemporary black life. 			<content:encoded><![CDATA[<p>Monday is Dr. Martin Luther King Jr. Day A variety of activities to celebrate the birthday of Martin Luther King made the entire Natchez and throughout the country. One of these measures is particularly important for “I Have a Dream for young people to lunch.”</p>

<p>Lunch hosted by the Natchez Association annual preservation of <strong>African-American culture</strong>. Along with a delicious lunch, lunch program this year has a short feature amazing young talent of Miss-Lou. Natchez native, Plezetta West, is the speaker. West, a lawyer was one of the young participants in the first annual “I Have a Dream for lunch.” He currently lives in New Orleans and last year won the big show “Wheel of Fortune” game.</p>
<p>This year’s theme, “Dream with a Vision, Live with a Purpose,” personifies Dr. King’s life. Dr. King was a civil rights leader who preached strongly against the mistreatment of black Americans and other people of color.</p>
<p>He spoke out against all forms of hatred and inequality and encouraged his listeners to ignore skin color and love all people. He also encouraged nonviolence.</p>
<p>Today people of all races in America claim freedom. Today we go to school together. We play on the same sports teams. We pray in the same houses of worship. However, life in America has not always been this accepting. With the luncheon, NAPAC hopes to inform our youth of the struggle and the values of Dr. King. Dr. King left us a legacy of hope and NAPAC wants to remind the children of Dr. King’s dream. More importantly, NAPAC wants them to remember that Dr. King and many others paid the ultimate price; they gave their lives in the struggle for justice and equality.</p>
<p>Last year, 2010, was historic and unforgettable for many reasons and as we move forward in this year, we hope that this luncheon be our largest and the most memorable. Therefore, we are calling on the youth throughout the Miss-Lou, black and white, to attend the Martin Luther King “I Have a Dream Youth luncheon” in record numbers.</p>
<p>Lunch will be at the Natchez Convention Center at 10 am on Monday. Please support your lunch in the churches, organizations and schools or individually. The cost of lunch is $ 11 per person.
